郑大厨上菜啦!【茄汁鱼片】

1)将一斤鱼肉切成 1 x 2  x 4 公分的片状,用少量盐和料酒腌制五分钟,加一汤匙淀粉拌匀上浆。然后放在油锅中炸熟定形,或者放在沸水中煮熟定形(就像作滑鱼汤一样),捞出沥干;
2)在炒锅中放一汤匙食油,烧热后放入两瓣大蒜爆香,然后加入切好的红萝卜🥕片、西芹、青椒,翻炒三十秒左右,依次加入水100毫升、蕃茄酱一汤匙、老抽半茶勺、糖一汤匙、盐半茶勺、陈醋半汤匙、白胡椒粉少许,煮沸后加少量湿淀粉勾芡;
3)倒入鱼片,搅匀后装盘上桌。
